PIGS AND BACON ACT, 1935 (PART II) (AMENDMENT) REGULATIONS, 1980.

I, RAY MacSHARRY, Minister for Agriculture, in exercise of the power conferred on me by sections 8 and 43 of the Pigs and Bacon Act, 1935 , (No. 24 of 1935), and after the consultations referred to in section 43 of that Act, hereby make the following Regulations:

1. These Regulations may be cited as the Pigs and Bacon Act, 1935 (Part II) (Amendment) Regulations, 1980.

2. These Regulations shall come into operation on the 3rd day of June, 1980.

3. The Interpretation Act, 1937 (No. 38 of 1937) applies to these Regulations.

4. Regulation 17 of the Fourth Schedule to the Pigs and Bacon Act, 1935 , (Part II) Regulations, 1965 ( S.I. No. 113 of 1965 ), is hereby amended by the substitution of the following paragraph for paragraph (c):

"( c ) Where pickle is injected this shall be done by means of a hand pump and needle under a gauge pressure of not less than 450 kPa (65 lbs per square inch) and not more that 550 kPa (80 lbs per square inch) or by means of a mechanical injector. In injecting, care shall be taken to effect adequate pickling without bursting of tissues. The amount of pickle injected shall not be less than eight per cent or more than thirteen per cent of the weight of each piece of meat being cured".

EXPLANATORY NOTE.

These Regulations, limit the amount of pickle (brine) which may be injected into meat during the bacon curing process to a maximum of 13% of the weight of each piece of meat being cured. They also make provision for the use of a mechanical (multi-needle) injector.
